From: Vineyards in Finale Ligure
Grapes: 100% Pigato
Climate: Rainy in the early season: as a consequence, grapes are naturally thinned out.
Vinification: Real white vinification (soft pressing). Must is separed from sediment by cooling and settling only. Fermentation takes place at controlled temperature.

 

Analisys data:
Alcohol: 13%
Dry extract: 19 grammes/litre
Maturation: At the producer’s wine cellar, 5/6 months in inox steel casks together with thin sediment. At least one month refinement once bottled.
Lasting: 2/3 years. (even if preferably during its first year).
Looks: Vivid straw yellow.
Smell: Wide smell of moss, sage, citrus fruit, yellow peach.
Taste: Complete, elegant, savory, pleasingly aromatic. Long enough, rightly alcoholic.
Goes with: Mainly fish dishes, shellfish, but also soups, cream soups, white meats.
